I've been looking at the rhubarb in our garden for a while now and pondering ideas of what to cook with it. Last year I made another batch of rhubarb relish (a favourite), but I wasn't really feeling in a relishy type mood, so Bella and I made rhubarb pie instead.
YUM! Although after everybody devoured a piece for dessert last night, they weren't sure that we should bake it again (I loved it though) .... different tastes buds and all.
Now I just need to wait for the rhubarb to grow back again - we used a massive 1.6 kilos for the pie! Once it does I'm going to get back onto the relish and perhaps a rhubarb and apple cake of some description.
We'll see ....
