My Mum used to bake this cornflake rock cake recipe when I was small and it's always been a family favourite. I thought you might enjoy it too, because I always think the best recipes are the ones that have been tried and tested over many years. My kids aren't particularly fond of sultanas though, so mostly I halve the sultana ratio back to 1/2 cup and that keeps them happy.
- 125 grams butter
- 3/4 cup sugar
- 1 egg
- 1 cup sultanas
- 1 cup S.R. flour
- Cornflakes - for rolling the mini cakes in.
Preheat oven : 180 degrees
Cream the butter and sugar. Add the egg and mix well. Add sultanas and self raising flour, mix well again - the mixture will be quite moist. Scoop out a heaped teaspoon full of the mixture onto some cornflakes and roll the cake around, ensuring that it's nicely covered.
Bake in the oven for around 12 minutes, or until cooked.
